Leche Flan




This recipe is one of my favorites. Ever since my mother prepared this dessert to us when we were young, I have always been craving to eat this from time to time. 

With this, I have created my own version that will work just fine with the ingredients that can be found in the groceries. And I am sharing the recipe below. 


Ingredients:
  • 1 can condensed milk
  • 1 teaspoon vanilla extract
  • 10 egg yolks
  • 1 cup brown sugar
  • 100 ml fresh milk


Steps:

(1) PREPARE CARAMEL MIXTURE
  1. With medium heat, melt the sugar in a saucepan.
  2. Remove the saucepan from the heat and transfer the melted caramel into 2 baking pan.

(2) PREPARE FLAN MIXTURE
  1. Stir in 10 egg yolks, condensed milk, vanilla extract.
  2. Stir well until combine.

(3) COMBINE (1) and (2)
  1. Pour and divide the flan mixture (2) into the 2 baking pan with caramel (1).
  2. Cover the 2 baking pan with aluminum foil.
(4) STEAM
  1. Prepare the steamer.
  2. Place 2 baking pan into the steamer.
  3. Steam for 30 to 35 minutes.
(5) SERVE
  1. With a thin spatula/knife, scrape all sides of the baking pan.
  2. Flip the baking pan onto your serving plate. 

END RESULT:

Chocolate Crinkles




Ingredients:
  • 1 cup unsweetened cocoa powder
  • 2 cups white sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup confectioners' sugar



Steps:

PREPARE COCOA MIXTURE
  1. In a medium bowl, mix together cocoa, white sugar, and vegetable oil.
  2. Beat in eggs one at a time, then stir in the vanilla. 


PREPARE SELF RISING FLOUR
  1. Combine the flour, baking powder, and salt.


PREPARE DOUGH (COMBINE 1 and 2)
  1. Stir self rising flour into the cocoa mixture
  2. Cover dough, and chill for at least 4 hours.


MAKE CHOCOLATE CRINKLE BALLS
  1. Preheat oven to 350 degrees F (180 degrees C). 
  2. Line cookie sheets with parchment paper.
  3. Roll dough into one inch balls. (I like to use a 1 tbsp measuring scoop. )
  4. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.


BAKE
  1. Bake in preheated oven for 12 minutes. 


SERVE
  1. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

Vanilla Souffle

After watching MasterChef USA Season 1, I really wanted to make my version of souffle... My bet on MasterChef  was Whitney Miller and she won... I am sooooo happy for her... She inspired me to be a cook.. not to be famous.. but to cook delicious foods for my loved ones ^_^

Well anyways... I will share my first ever souffle!!!

Ingredients:
  1. 1 tbsp. unsalted butter
  2. 1 tbsp. all purpose flour
  3. 1/2 cup of milk
  4. 1/2 tsp. vanilla extract
  5. 2 tbsp. caster sugar (granulated sugar)
  6. 2 eggs
  7. Pinch of salt

Anyways.. my goal is to experience or to feel the excitement in making / baking the souffle... and I was able to do it.. YEY!!! Thanks to my ever supportive friends Jeddo and Potato... We anxiously waited for 15 minutes in front of the oven just to check if our souffle will really rise... and it did... WAAAAAAAH we were like little kids so happy watching our work perfectly risen.. =))...
